Paleo Blueberry Pancakes

Happy Memorial Day Weekend Everyone!  In honor of a nice weekend at home, here's my Completely-Made-Up recipe for Blueberry pancakes.  Tweak as you wish and share your thoughts!!

Paleo Blueberry Pancakes

4 eggs- beaten



1 smashed banana
1 cup blueberries
3/4 cup almond flour/meal
1/4 cup coconut flour
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp baking soda
protein powder if desired


Mix all ingredients except blueberries with a blender.  Fold in blueberries.
Cook on a skillet just as you would regular pancakes.  They will take slightly longer to cook through than normal pancakes because of the banana's, so cook just below medium heat and be patient.  Wait for bubbles in the middle of the pancake to start popping before flipping, if you flip sooner the middle will be mushy from the banana.


They are dark in color because of the cinnamon

  1. I made these yesterday morning, after dreaming about almond and coconut blueberry pancakes for weeks. They were pretty tasty.

    I only made 1/4 of the recipe, since I was only cooking for one person and, as wonderful as I knew they would be, I know that I *shouldn't* eat that much nut flower in a day. That being said, my ratios may have been a little off since I could only eyeball 3/16 cup almond meal and 1/8 cup coconut flour. I did not add protein powder.

    The mixture turned out thicker than I was expecting, but I figured I'd cook my first pancake this way. For the second cake, I added in some water to make it resemble the consistency of regular pancake batter. The one with water turned out a bit fluffier, so next time I will add in the water right away.

    My batch made two palm sized cakes (3.5-4 inches in diameter), so I would guess the whole recipe would make ~8 cakes, which is less than shown in the picture. With two eggs scrambled with coconut milk cooked on the side, this was a wonderful breakfast for one. I topped my cakes with some ghee (okay, lots of ghee) and some wonderful Michigan maple syrup. Yum!

    NewCamiNeeded-- I am curious, are you still Paleo over a year after posting this? How long were you Paleo before starting? It seems to be a very sustainable way of eating, although I'm only on Month 3.

    Glad you liked them, and good tips on the smaller batch!!
    Yes, I am coming up on 2 years of paleo eating and still wouldn't consider any other way of life. We have 1-2 cheat meals a week, but other than that, Paleo is our way of life around here. I actually just gave birth a week ago and plan for our little one to eat paleo as well.
    I will try to update with some more recipes, as I've been slacking on that front for quite a while.
